Peanut Butter Strawberry Banana Breakfast Quesadilla

We all know mornings can be hectic, especially when you're trying to plan a nutritious breakfast to help everyone start their day on the right foot. When I found this recipe from Ambitious Kitchen, I knew it was the perfect option for busy parents, people heading to the gym, or just your every day breakfast lover! 

This dish combines sweet and savory elements to give you the perfect flavor profile to start your day. 

Ingredients:

  • Peanut butter - I used Natural Way chocolate peanut butter to make it a little sweeter
  • Tortillas - I used 1 for a smaller quesadilla but you can use 2 if needed
  • Banana - I only used half of a banana but you can add more according to preference
  • Strawberries - I used 3 large strawberries because I wanted that to be the more prominent flavor 
  • Blueberries - I used a few for added flavor throughout 
  • Cinnamon - I just sprinkled it over the top after I added the peanut butter and fruit 
  • Chocolate chips - I added a few wherever I saw spaces in-between the fruit 

Instructions: 

Heat up a skillet with either nonstick spray, oil, or butter. I used butter because I love the flavor it gives to the outside of the tortilla. 

Lay your tortilla(s) out on a plate and spread the peanut butter evenly across the surface. 

Arrange bananas, strawberries, and blueberries in a pattern across the tortilla in order to get a similar amount of fruit in each bite. 

Sprinkle cinnamon and chocolate chips over the top of the fruit and peanut butter. 

Either fold your tortilla in half (smaller quesadilla) or add another tortilla spread with peanut butter on top of the tortilla you just added ingredients to. 

Place the quesadilla in the skillet for 2 minutes on each side, or until crispy. 

Cut into slices and serve.
