Gluten Free 4-Ingredient Peanut Butter Chocolate Chip Cookies Recipe

December 4th, 2021 is National Cookie Day, AKA one of the best days of the year. Who doesn’t love an excuse to make a fresh batch of cookies?  

I looked everywhere for the perfect recipe that combined my love of Natural Way peanut butter (YUM) with my love of using very few ingredients (I am not a baker by trade) and found this AWESOME recipe from Gimme Some Oven 

Ingredients:  

  • 1 cup of peanut butter – I used Natural Way gingerbread peanut butter to give the cookies more of a seasonal taste 
  • 1 cup of sugar 
  • 1 egg 
  • ½ cup of semi-sweet chocolate chips  

Instructions: 

Preheat your oven to 375 degrees.  

Line a baking sheet with either parchment paper or aluminum foil – you can also use non-stick spray.  

Mix up all four ingredients in a medium-sized bowl – I used an electric mixer to make sure the ingredients were all distributed evenly throughout the mixture.  

Roll the dough into tablespoon-sized balls and space them evenly on your tray. Flatten them slightly using a fork or your hand.  

Bake the cookies for 6-8 minutes, or until they are browned. Let cool for 3-5 minutes before eating.
